李建達 Xander Lee
Xander is the chef and the owner of The F Courage Kitchen, one of the hottest Taiwanese fusion brasseries in Kaohsiung. He graduated from National Kaohsiung University of Hospitality and Tourism, the most prominent culinary school in Taiwan, with a degree in Chinese Culinary Arts. He won a lot medals since 2004, the latest one is the bronze medal in FHA Culinary Challenge in Singapore in 2011. Grew up in a traditional Taiwan family with his professional major, Xander has tons of Chinese culinary knowledge and is expert in all kind of Taiwanese and Chinese classics. He also wishes to advocate the hospitable diet culture of Taiwan. However, he is not confined to his background. He likes to experiment with different tastes and textures, tingeing from the Taiwanese culinary culture to create his own personal recipes.
My Kaohsiung chill-chill
My grandmother was a living recipe of Taiwanese home cuisine. She cooked with love and concern to all the family. I especailly like to sink into her recipe, where I feel relieved and chill, after a rush day in my own kitchen. Her warm and tender flavour always reminds me one the most important duties of a chef - care about the people you cook for and do your best make them chill and happy.
